EGG HEAD - WHAT'S CRACKIN'?

Eggs - An excellent source of protein. Yummy! Ever since I was a little girl, I loved eggs!  Fried, poached, sunny-side up, hard-boiled, scrambled, shirred (baked), just not soft-boiled. Soft-boiled eggs always reminded me of yellow runny snot. Actually, they still do, and they make my tummy hurt too.

Anyway, my love of eggs started when I was just a wee child, Mini Moxie, so sweet, sensitive, innocent, and shy. What happened?! Could you believe, that I could barely stand to eat meat?! Glad I was able to welcome meat back into my life when I was ten. Phhwweee! I loved a poached Egg in my soup, a fried egg with some salt/pepper over white rice, a hard boiled egg in my salad, scrambled eggs in my fried rice and the list goes on... Sh!t, I still do! Now that I think about it, I wonder why I wasn't always farting. Thank goodness for that... So, In honor and tribute to the unfertilized chicken egg that I have always adored, below is a link to a Shirred Egg recipe that looks bangin' from Saveur!  Saveur is usually on point and the pics attached to this recipe, make this dish seem so easy to make!
